This is perfect for boning chicken and other poultry, and many other tasks in the kitchen.
I believe the handle material is an excellent choice, and when you look closely it has a bit of grain to it.

Fairly sharp, not razor sharp, I noticed some roughness on the edge when I got it so I ran it on my steel first thing. The jury is out on durability and quality of the steel. Overall though I would say it is a good product for the money spent
